I wonder how frequently fast food restaurants change the cooking oil in their fryers?

I believe they are using some kind of an oil filter at the end of the day, but what chemical is it thay they drop in the oil to keep it from darkening which, further extends the life of the oil?I wonder how frequently fast food restaurants change the cooking oil in their fryers?i worked in a chicken rest..our two fryers were changed on a daily basis...totally drained and the oil thrown away and the fryers scrubbed top to bottom..normally this happened at night..a few times we would have to drain the oil during the day and it didnt get scrubbed out...we didnt use anything to keep the oil from darkeningI wonder how frequently fast food restaurants change the cooking oil in their fryers?Probably every other night if they are busy.I wonder how frequently fast food restaurants change the cooking oil in their fryers?Every 2 days tops...depending on the restaurant.I wonder how frequently fast food restaurants change the cooking oil in their fryers?me too.It sure taste like some do more than others!I wonder how frequently fast food restaurants change the cooking oil in their fryers?i have worked at a few fast food places and one place cleaned it out...filtered and cleaned out the fryer and vat...everyday and replaced the oil once to twice a week...another place replaced the oil everyday.I wonder how frequently fast food restaurants change the cooking oil in their fryers?When I worked for McDonald's many years ago, we had to filter the fryers every night. Depending on how much use they got, we had to change out the oil. There is a vile that we used to sample the current vats oil, and compare it to a similar dark vile. If it is dark like that vile or darker, it it time to change it out. Usually chain restaurants are good about changing the oil. But smaller locally owned restaurants try to penny pinch all they can. We have a three vat fryer and we filter the oil every night. I'm not exactly sure what the checmical is that we put in the fryer filter to filter the grease, but it's a powder called %26quot;Fry Saver.%26quot; When we change the grease, which at our place we change fryer one on monday, fryer two on wednesday, fryer three on friday, we scrub the fry vats with a green liquid, which I do not know the chemical contents of, that's just a degreaser. We fill the vats with a mixture of degreaser and water and then boil the fryer out. After the fryer boils we fill the vat with clean water and let that boil to remove the film that the degreaser leaves on the vats.



Hope that helps.I wonder how frequently fast food restaurants change the cooking oil in their fryers?1'ce a dayI wonder how frequently fast food restaurants change the cooking oil in their fryers?at the chippy where joe works, the oil gets changed at the weekend, but topped up when needeedededdededI wonder how frequently fast food restaurants change the cooking oil in their fryers?There is a scrubing solution for industrial use but you might not have enough grease to use it. if you filter your grease after using it it will last much longer. if you go to a store and buy a grease can it will have a strainer in it. if you use it it will keep your grease cleaner and lighter longer. your grease gets dark because of the other things in it that are continuing to burn in the grease.I wonder how frequently fast food restaurants change the cooking oil in their fryers?im a manager at wendy's we filter three times a day. we have three vat fryer. the last one for nuggets and 99垄 crispy chicken sandwich that one get thrown out every other day. the first and middle one are for fries. the middle goes to the last one and first is split in half between the first and middle one then top off with fresh oil (that so the fries will have a golden color cause all fresh oil fries come out white) and are chicken cooker (homestyle and spicy chicken sandwiches) oil is also filter three time a day but change based on a test strip (suppose to be scientic) and as ex mcdonalds employee they also filter three (four if 24 hour store) times a day and change based on a McOil test kit.I wonder how frequently fast food restaurants change the cooking oil in their fryers?They are suppose to change it every day...but you ever get fries that are an odd brown color and taste like grease, then you can bet they arent changing it but maybe once a week.
